Understand edit

Sant Pere d'Ullastret Church

The municipality is located on the right bank of the Daró River, which crosses the area from north to south in its western sector. At the top of a gentle elevation, it was built with a clearly medieval structure. Well-preserved walls encircle a small nucleus of narrow and steep streets that lead to an esplanade where it is believed that the sovereign enclosure of a now disappeared castle once stood. In front of the northern part of the wall, there is a Gothic-style covered market or square with wooden beams supported by two pointed arches.

Recuit de drap with honey

Recuit de Drap is a type of soft and creamy fresh cheese with a slippery texture, wrapped in a cellulose cloth. It has a shiny milky white color, a smooth and creamy texture, and a fresh, sweet, and milky flavor. It is made from pasteurized milk and is typically consumed as a dessert, often accompanied by honey or sugar.

Originally, "recuit" was made from the milk of sheep, goats, or a combination of both. The milk was boiled twice, allowed to cool, vegetable rennet was added, and the mixture was placed in small ceramic terrines weighing 100 to 200 grams. After a period of rest, it was ready to eat.

For preservation, it requires low temperatures, typically between 2 and 4 degrees Celsius. This cheese is usually produced by small artisanal businesses, where the point of sale is often the same location as its production or small local stores. It is a traditional product of the Empordà regions.
